Tofu is a food made from various kinds of beans, also known as water tofu, which originated in China.
The process is to first make the beans into soy milk, and then solidify and form.

There are currently three types of coagulants :

  1. Edible gypsum point system, the water content of such tofu is relatively high, about 90%, the texture is relatively tender
  2. Brine or syrup point system, such tofu has less water content, water content is about 85%, the texture is tough, and the tofu taste is thicker, which is easier to cook.

豆腐是ㄧ种豆类所制成的食品,又称水豆腐,起源于中国。
其制程为,先将豆类制成豆浆,再来凝固成形。

其添加的凝固剂,目前有三大类:
1)食用石膏点制,此类豆腐之含水量较高,在90%左右,质地较为细嫩
2)卤水或酸浆点制,此类豆腐的含水量较少,含水量在85%左右,质地较韧,豆腐味较浓,较容易烹饪。
3)葡萄糖酸-δ-内酯点制,质地更为嫩滑与细腻。

传统的豆腐,大多使用黄豆,也有黑豆、花生豆、绿豆等等的豆腐...

根据报导指出: 天天吃黄豆,可以降低胆固醇,防止老化,所以豆腐也是一种养生的食材。

使用豆腐所搭配的菜肴,非常的多,在中国,有着肉植物之美称,為吃素者之必备的食材之一。
