ย ย ย ย ย Another #Ital recipe for you all to enjoy, and a food most Rastas don't know is edible. Cassava leaves are poisonous if not prepared properly, and that is probably why they aren't yet a staple food around the world, especially here in the Caribbean. However, don't let this deter you, cassava leaves are really easy to cook, delicious and full of protein. If you live in a country where the locals consider cassava leaves inedible, then you can likely acquire them free of charge.
ย ย ย ย ย In this post, I will share with you some interesting nutritional facts about cassava leaves, how to safely prepare them for consumption and a delicious Indonesian Cassava Leaf Curry recipe from our Ital restaurant in Cambodia.
๐ฌ A LITTLE SCIENCE ๐งช
ย ย ย ย ย The roots and leaves of poorly processed cassava plants contain a substance that, when eaten, can trigger the production of cyanide. Long-term low-level cyanide exposure can lead to the formation of goiters and/or tropical ataxic nerve neuropathy. Severe cyanide poisining can lead to konzo, and in some cases, death, especially within populations with a low-protein diet. REF | |
---|---|
ย ย ย ย ย The cyanogenic compounds within cassava leaves can be reduced to harmless levels through various preparation methods, including boiling, pounding, washing, sun-drying and combinations of these methods. REF | |
ย ย ย ย ย Cassava leaves contain extremely high levels of crude protein (around 30% dry weight) compared to traditional vegetables, and dietary fiber is also very high. REF |
๐จโ๐พ HOW TO HARVEST CASSAVA LEAVES โ๏ธ
ย ย ย ย ย We live in an apartment within our landlord's house here in Suriname, and there is quite a lot of space for gardening. I have been tending to some abandoned sweet cassava, and after some mulching, pruning and a little love, this little patch has been producing enough leaves for to feed our family of 4 once a week.
ย ย ย ย ย If you look carefully look at the before picture, you will see a layer of brighter leaves on the upper portion of the plants. These brighter colored young and tender leaves are the ones you're after. During our harvest, I actually did some pruning to encourage more branching and leaf production.
ย ย ย ย ย Be sure to pick the stems along with the leaves, as plucking the leaf stem will encourage new growth to return much faster. I took way more than we needed, but returned all the older darker leaves and trimmings to the base of the plants.

โฒ๏ธ PREPARATION ๐ช
Bring a big pot of water (the more water the merrier to reduce the cyanogenic compounds) with a little salt to a boil.
Add the washed cassava leaves, boil for 5 minutes, strain the water, reserve the leaves.
When the leaves are cool enough to handle, roughly chop them and then keep aside.
Take all the spice paste ingredients and blend them in a food processor, or do it the traditional way and use a mortar and pestle.
As we are still immigrants without the well-equipped restaurant kitchen we had in Cambodia, we have neither, so I laboriously chopped everything as small as possible.
Bring a wok or karahi to heat on a high flame and add the coconut oil.
Give the coconut oil a few seconds to come to temperature, then add the spice paste ingredients, galangal and lemongrass.
Fry the ingredients briefly on high heat, then reduce flame to medium and fry until fragrant and oil has separated from the paste.
If you are like me and have no mortar and pestle or food processor, but you do have a sous-chef, allow your sous-chef to supervise your spice paste reduction.
Have your sous-chef fry the finely diced ingredients on a low flame, adding small amounts of water as needed until it gets as pasty as it's going to get.
Now add the water, bring to a boil, cover and simmer for 15 minutes stirring occasionally to make sure there is no burning.
Add the cassava leaves and coconut milk, bring back to a simmer and cook for 5 minutes.
Remove from heat and serve this delicious Ital Cassava Leaf Curry to fellow human beings.

ย ย ย ย ย I hope you have found this recipe to be simple but delicious. Make it once to see how you like it, then make it again in the future and adjust the amounts of lemongrass, galangal, sugar and chilies to your liking.
ย ย ย ย ย I hope I have not scared away from eating cassava leaves. Cassava poisoning is really rare and not something you should fear as long as you follow the correct preparation techniques and maintain variety in your diet. Please enjoy this ITAL CASSAVA LEAF CURRY.
My mother cooked cassava leaves very often at home because we were in Indonesia and found it very easy. various kinds of processed can be made with cassava leaves. as boiled and smoked with shrimp paste
ย ย ย ย ย Yes, there are so many ways to eat them. The Indonesians probably eat more than anyone. Here in Suriname the Javanese aren't too aware they are edible. At an Indonesian restaurant, shrimp and sometimes anchovies are the only ingredients you have to ask the cook to leave out to make this a vegan dish. As we are Italists, we don't anything animal derived.
thank you for sharing interesting information, I do know many people of Indonesian descent in Suriname they were taken by force when my country was attacked by the Dutch. for food there are certainly many similarities
ย ย ย ย ย Just got some ENGAGE tokens, testing them out by rewarding my readers who comment on my posts, and they are also the reward the for the current #SteemComic. Congratulations @hattaarshavin, I've sent you 1 ENGAGE.

This is super similar to Indonesian cassava leaf curry too
I miss it much. We dont have cassava leaf here in Canada. I always have to use kale
๐๐๐๐
ย ย ย ย ย Basically that's what this is, a vegan/Ital version of the Indonesian way of making it. Although we don't have fresh turmeric root and leaf, nor shallots, we improvise with what's local.
Looks delicious!!!
Are you a chef in real
life? Fantastic presentation.

ย ย ย ย ย Yes, I have been a cook/chef on and off for around 20 years. In Cambodia we had our own Ital restaurant featuring a mix of South Asian, Southeast Asian and Caribbean flavors. Give thanks @super-irie.

ย ย ย ย ย @conradsuperb, if you do end up in Cambodia, I can recommend some off the beaten path things you can do, and also put you in touch with some people who can give you a one-of-a-kind experience.
Hey that sounds great - ill get in touch with you about this for sure. Are you on discord ? I think I've seen your name pop up there a few times ??
I'm on the ReggaeSteem Discord and various other Discord groups, same username. Glad to give any advice for your trip. Cambodia has been home the last 10 years before our journey westward.
Justin thank you for being a great example how to do a great informing and sourced blog , and tonightโs cook hihih , of and you miss steemterminal in your footer we Have a free banner if you want it !
ย ย ย ย ย Thanks @brittandjosie. If there are banners in the SteemTerminal Discord, then I know where to look. Well, to be honest I have been wanting to delegate a little to SteemTerminal to help support the project. Also, there are a couple of outgoing delegations I have which are not so relevant anymore, and I've been wanting to make some changes. Stay tuned.....

Your sous chef is the cutest. I have never had it but if i ever end up in Suriname you must cook me ALL THE THINGS.
ย ย ย ย ย Yes, Monkey B was also Minister of Propaganda at our Ital restaurant in Cambodia. We'll be here for at least 6 months to a year more. We have an interesting job offer in Batumi, Georgia, opening an Ital restaurant at a reggae bar and training the staff, etc. It would only be a 3-4 month long job, as it's only open during the tourist season.
I can think of nothing better than cooking vegan food to reggae music. xx Sounds like awesome fun!

ย ย ย ย ย Yes-I @missaj, will do. More time, give thanks for the support.
@justinparke, Conversion of Poisonous plant into Eatable Ingredient is a critical process, and poisonous aspects keep these kind of plants away from the Recognition.

ย ย ย ย ย True words @chireerocks. One man's waste is another man's daily bread.
You came up with very unique perspective. Stay blessed.
If JAHMFEST needs a caterer to prepare veggie dishes I'd vote for you.
ย ย ย ย ย Meow, give thanks @crypticat. Much more to come in the food department........
I love this recipe too and often make it at home.
Greetings from Indonesia.
ย ย ย ย ย Thank you @anggreklestari. Indonesians are smart people to have figured out such ingenious ways to prepare cassava leaves. When we lived in Cambodia, fresh turmeric was everywhere, but here in Suriname it's hard to find. I speak Khmer, the languages are very similar. In Khmer language is called "pสฐiesaa", and in Indonesia it's "bahasa." There are lot of historical connections between Cambodian and Indonesia, especially the Javanese people.
