Settlers in Louisiana began cultivating okra in colonial days. Louisiana is at the outlet of the Mississippi River in the Southern United States.

The people in this area call themselves Cajun.

Cajun cooking often includes okra. The Cajun dish called "gumbo" includes okra when it is in season or dried sassafras leaves (aka filé) when it is not.

Cajun cooking is considered to be some of the highest class food in the United States. So, you will often see dishes featuring okra in five star restaurants.

So, okra is associated with gourmet cuisine in other parts of the world.

NOTE: Gumbo usually starts with a roux made of oil and flour. One then adds a variety of meats and spices then thickens the dish with okra. Essentially any dish that starts with a roux and includes okra is called a gumbo.

This is all interesting to know.
For most of my life I thought okra was only eaten in Africa.

Where are you from anyways?
And do you eat okra too? You know quite a lot about it.

I live in Utah which has distinct winters and summers with several feet of snow. We cannot grow okra here. The dish is popular in New Orleans in the Gulf of Mexico.

My local store has frozen okra.

I occasionally cook chicken gumbo.

If you are in a region that grows okra, it would be beneficial to research gumbo recipes which combine French and African cooking techniques.

There are quite a few youtube videos about cooking gumbo. Gumbo is pretty much like the dishes you showed. Gumbo starts with a roux which one makes from flour and oil. It takes a little practice getting the roux right. Quite frankly, I prefer okra based stews without the roux.

We in Nigeria like to eat okra soup with a cassava based product called garri.
This is what it looks like.

Garri is a more accessible but we also use other similar looking companions that can be made of wheat, plantain, or yam flour.
