I have had some experience of working on IoT deployments for some large industrial sites and connecting them to field service systems that allow remote monitoring and more accurate preventive maintenance. It is truly amazing what can be done. You have highlighted so many possible areas.

I am looking forward to the day my kitchen devices can talk to each other more productively.
