One week into growing Sweet Potato slips

It's been about a week since I cut up some Sweet Potatoes and placed in mason jars with water. Signs of life are starting to show. Some with roots, others with leaves and a few with both.

The one above is a Sweet Potato I grew last year, really surprised to see how vigorous the growth is. The roots are bunching up at the bottom.

Its starting to form some leaves on top as well so looks like this spud is quite alive.

I try to replace the water every two to three days. One of the Potato slices turned bad and started breaking down in the water. And it smelled real bad.

It's interesting to try out this growing method. The color of the cut sweet Potato skin changes. Goes from a bright yellow orange to a grey color when soaked in the water. I think its forming thicker skin.

A closer look at the change. The bottom half is in the water and unchanged and the upper half is exposed to air. It must be oxidizing the skin or something like that.

The sprouts on top are a deep purple color. I think I need to grow them until the sprouts form roots as well.

Some of them are doing exactly that. I'll let this one grow a few more days but this is a good sign of what I am looking for. Leaves and roots connected, that is a Potato slip.

I've noticed the store bought Sweet Potatoes are growing much slower than my little runty Sweet Potatoes. Seems like mine have more life in them. But there are signs of the cut up store bought spuds showing life.

Looking forward to the next few weeks while they grow more. Leaves and roots together is what I am looking for to form successful slips.
