Harvest the fruits before they are too soft. Cut them in two and remove the "stinging hairs". Put them in a saucepan, just covered with fresh water and a splash of lemon juice. Cook over a low heat until soft, while stirring from time to time. Add the sugar and continue to cook over a low heat until the consistency of a jam is reached. Pour into a sterile container and seal. Voilà, voilà! And if you are making cookies, "glue" two together using a lot of rose hip jam as glue.
