I have a FOSS app store. But I use Gboard on my phone keyboard. So I guess not doing much. Is there any FOSS keyboard for Android that use a swipe-esque technology?

Try FlorisBoard. It is nowhere as good as Gboard for some features. But I have decided to stick with it for privacy reasons. FlorisBoard is at least bearable: https://f-droid.org/en/packages/dev.patrickgold.florisboard/
