How to preserve Chili Peppers for a long time

This year, my chili pepper plant (Capsicum annuum, "Calabrese" variety) has been at its best, producing several kilos of bright, red, and incredibly spicy peppers.
I often use this spice in the kitchen, especially when preparing vegetables. But such a large quantity of peppers is truly difficult to manage, because fresh peppers don't keep for long.

Quest’anno la mia pianta di peperoncino (Capsicum annuum, varietà “calabrese”) ha dato il meglio di sé, producendo diversi kg di frutti rossi, brillanti ed incredibilmente piccanti.
In cucina utilizzo spesso questa spezia, specialmente quando preparo le verdure. Ma una tale quantità di peperoncini è davvero difficile da gestire, perché da freschi non si conservano a lungo.
So I thought about how I could increase the shelf life of these peppers. Searching online, I found two main options: drying or freezing.
I opted for drying, fortunately because my boyfriend @ghilvar owns a powerful dehydrator, as he uses it for his herbal medicines.
Allora ho pensato a come avrei potuto fare per aumentare la conservazione di questi frutti. Cercando sul web, le opzioni erano principalmente due: essiccazione o congelamento.
Ho optato per l’essiccazione, perché fortunatamente il mio fidanzato @ghilvar possiede un essiccatore potente, dato che utilizza per le sue erbe fitoterapiche.
First, I washed the peppers thoroughly and dried them. Then, I chopped the peppers, removed the seeds, and arranged them on the dehydrator racks.
The drying process took about 12 hours. It may seem like a long time, but it actually requires no intervention on my part, so it's easily manageable.
Finally, I finely chopped the dried chili peppers in my food grinder I transferred the powder to a glass jar, so I'll have chili peppers ready to use for about 2 years.
Prima di tutto, ho lavato bene i peperoncini e li ho asciugati. Poi, ho tagliato i frutti a pezzetti, rimosso i semi, e li ho disposti sui cestelli dell’essiccatore.
L’essiccazione è durata circa 12 ore. Può sembrare un tempo molto lungo, ma in realtà non è richiesto nessun intervento da parte mia, quindi è facilmente gestibile.
Infine, ho tritato finemente i peperoncini essiccati nel mio tritatutto. Ho trasferito la polvere in un vasetto di vetro e in questo modo potrò avere peperoncino pronto all’uso per circa 2 anni.
