I process my garden produce into special spices through a fermentation process

For today I want to publish about one type of traditional kitchen spice and you can only find it in our city, namely Aceh, in other cities in Indonesia the majority of people use tamarind fruit to get a sour taste in their dishes, but it is very different from the people in Our city uses fermented vegetable starfruit to get a sour taste in our dishes, so our tongues have attached to the sour taste produced by fermented vegetable starfruit and not the sour taste obtained from tamarind fruit, this kitchen spice has been introduced by Acehnese people since before Indonesia's independence, which means that the Acehnese people have been using fermented star fruit as a vegetable since centuries ago and are still using it today, and this is something very extraordinary for us.

a few days ago I took the time to pick some star fruit vegetables in our garden, actually I have done this from time to time but this time I published it here and hopefully it is useful and you can do it too, so after a few days it went through the drying process thoroughly. manual in the sun and thankful that today I have got fermented star fruit, and the name for this spice in our city is "asam boh limeng", or you can also hear one of the very familiar songs in our city about this spice Youtube- Asam Kareeng

So it could be said that kitchen spices resulting from the fermentation process of star fruit are one type of spice that is very important for our society, overall 90% of the dishes made by our people definitely contain this traditional spice, so now let's go to see the process I have done to make traditional kitchen spices:


The color of the star fruit has changed to faded yellow, and this can be harvested and the results obtained after fermentation are not in vain, so I have got star fruit which is suitable for making traditional Acehnese kitchen spices.


This is fresh star fruit when I want to pick it, but I can't pick all the star fruit because there are still some that are not yet ripe, to make fermented kitchen spices I have to pick them that are ripe 💯 so the kitchen spices that I get will be very quality.


After picking some ripe star fruit, then I washed it until it was clean without the slightest dirt remaining, and now I dried it in direct sunlight so that the process was fast.

sorry I forgot to take a photo of another important thing, but I can explain it well to you, if you are fermenting star fruit then at night you have to cover the star fruit with white plastic so that it steams easily, the fermentation process is very important at night to get steam. After a few days of getting steam on the star fruit, you have to sprinkle enough salt so that your fermented star fruit doesn't rot.

The picture above is the first day's drying process that I did after I picked the star fruit and washed it.


after the drying process that I did now I have got traditional kitchen spices, and for fermentation this time I only need 6 days to dry because the weather is hot so to dry in the sun I can get very strong sunlight, for previous fermentation I had to wait up to 20 days because the weather is rainy, and I think fermentation is very easy because of the support from the universe to carry out this fermentation.


and I was very happy when I saw my mother's smiling face because I had obtained the traditional spices that I produced through a fermentation process, and now my mother will make a typical Acehnese dish, namely "Kuah Asam Keueung" which is a type of fish dish and an important spice that must be used. is fermented starfruit, so the fermentation that I do from our garden has made my mother happy. ☺️☺️

So planting is the most sensible routine for anyone to do because from gardening activities we can get a lot of things, like what I have done today, this really saves costs, if I go to the market I have to spend $3 to get 100g of fermented star fruit, So making it from your own garden is the best way to save on consumption costs and also make you proud of being a farmer.

Awww, what a lovely post, I know this fruit very well, we call it Iba in our village in Philippines. Very sour, but nice in sweets. Great in cooking with coconut milk. They bear prolific fruits. I actually got seeds of this and about to sow them.
